Description

The Phoenix Chef Knife creates a beautiful balance between Eastern and Western cutlery design. The thinner blade and dramatic downward arc of the upper spine converging with the shallower edge pays homage to its Asian influence. The handle design and ergonomics finds its inspiration in the classic ‘pistol grip’ of a precision fencing foil. The primary grip and power are shifted to the back of the hand nearer to the wrist, leaving the thumb and forefinger free to take full advantage of the maneuverability and control offered by the thinner neck.

With a balance point just in front of the beautiful and rare California Manzanita Wood handle, this knife wants to go to work as soon as it hits the cutting board!

These knives have been meticulously designed to offer exceptional ergonomics providing you with the precision and control you would expect from a world class kitchen knife. All of the Phoenix Series knives are hand forged from either 5160 or 1084 high carbon steels.

A properly heat treated high carbon steel will out perform ANY stainless steel currently on the market. As with all high quality kitchen cutlery, these knives must be cared for. These are NOT dishwasher safe and should be washed by hand only.
